Blast Chiller from Irinox

Blast chilling is a method of cooling food quickly to a low temperature that is relatively safe from bacterial growth. Bacteria multiply fastest between +8 °C (46 °F) and +68 °C (154 °F). By reducing the temperature of cooked food from +70 °C (158 °F) to +3 °C (37 °F) or below within 90 minutes, the food is rendered safe for storage and later consumption. This method of preserving food is commonly used in food catering and, recently, in the preparation of ‘instant’ foods, as it ensures the safety and the quality of the food product.

Rapido Blast Chilling

Freddy’s blast chilling cycle rapidly lowers the temperature of hot food, just cooked, to +3°C at the core. By quickly dropping through the 40° C – 10° C temperature range you avoid bacterial and mould growth and retain quality, fragrance, colour and aroma, tripling food shelf-life. Any food that is cooked and blast chilled to +3°C can be kept for 5-7 days in a refrigerator and will be fresh and of excellent quality.

Controlled Thawing

Thawing is a delicate process that often affects food quality. Freddy thaws food quickly with gentle ventilation that allows water micro-crystals to be reabsorbed into the food. This thaws food evenly without hot spots, preserving the natural fragrance and texture of each food. It is also great for food that is served cold, like sushi and semi-frozen and cream-filled desserts.

Cool Drinks

In just a few minutes Freddy will cool bottles of wine, chill drinks and prepare fresh aperitifs for guests. The drink cooling cycle chills bottles by about 1°C per minute. This handy feature has been designed for lovers of fine wine who prefer their drink at the right temperature, to bring out its fragrance and bouquet.

Natural Leavening

Steady leavening at a constant temperature is the best way of making the yeast rise in bread, pizza and brioches. Freddy’s leavening cycle makes sure all leavened products have a rich flavour, are light, nice and crumbly, and above all are easily digested.

Low Temperature Cooking

Used by the top chefs, low temperature cooking cooks meat and fish gently, never exceeding 75°C at the core. Food is essential for wellbeing and good eating habits start at weaning. Taste is educated in the first years of life and eating habits are learned that will stay with us all our lives. Here are some tips for managing the feeding of children intelligently and healthily with the aid of Freddy®.

Vegetable stock

Baby food for weaning is prepared with vegetable stock. With Freddy® you will no longer need to prepare small quantities every day. You can cook a week’s or a month’s supply ready to use; it will keep perfectly in the fridge or freezer without its nutritional value being altered at all. Vegetable stock is prepared and put hot into Freddy® for blast chilling to +3°C. The stock blast chilled in this way can be kept in the fridge at 4°C in sealed containers. It will last up to a week and keep all its natural organoleptic qualities, including vitamins. The stock can be placed in vacuum bags after chilling and kept in the fridge at 4°C. In a vacuum pack it will last up to 2 weeks. If you wish to keep it longer it can be frozen by Freddy® to -18°C. It will also be practical to freeze it in convenient single portions (using silicone moulds, for example) which can be regenerated in the microwave or in a pan on a low light, with nothing wasted. Due to micro-crystals, thawing will be practically instant. Stock frozen in this way and kept in the freezer will last for 6-8 months. P.S. vegetable stock is an important basic ingredient in the kitchen and our advice is to use it also for giving flavour to all your dishes, as an alternative to stock cubes, an industrial surrogate rich in glutamates (harmful to health).

Children’s snacks

Industrial snacks and other pre-packed bakery products are tasty, but not healthy. Home-made cakes and buns are much better for health. Besides knowing what goes into them, we can be sure of avoiding hydrogenated vegetable fats, colorants, preservatives and other chemical additives. With Freddy® we can easily prepare short pastry snacks. Prepare the short pastry, divide into blocks wrapped in cellophane or spread into aluminium moulds, and shock freeze at -18°C with Freddy®. If you wish, you can add your favourite ingredients to the frozen short pastry (peanut butter, jam or cream) for a tart ready for the oven in a few minutes. In addition, if the tart is chilled with Freddy® at +3 °C the flavour and fragrance will remain intact for another 6 days. With Freddy® just a few hours are enough to prepare a good stock of tasty healthy snacks for the kids. Thirst-quenching iced lollipops Squeeze some oranges, add a little sugar, pour into moulds and shock freeze with Freddy®. In half an hour your kids will have vitamin-rich iced lollipops.

Seasonal produce

Peas in May, mushrooms in October. These are some of the things we’d like to have all year round, with the same flavour and quality they have when in season! With Freddy® all seasonal produce, as well as meat and fish, can be shock frozen to a core temperature of -18°C and kept in sealed containers or freezer bags in your home freezer. Sauces

Sauces cooked and immediately blast chilled to +3°C by Freddy® then placed in sealed containers in the fridge will keep for about a week. If they are vacuum packed they will keep as long as 2 weeks. If vacuum packed and shock frozen to -18°C by Freddy® they will keep (in the freezer) for 6/8 months. Once thawed the sauce will keep perfectly for 4 days in the fridge. All sauces, as well as soups and broths, can be shock frozen at -18°C in convenient single portion silicone containers (e.g. flexipan) and kept in the freezer, ready to be rapidly regenerated in the microwave or a pan.

Fish or meat

Cutlets, chicken steaks, turkey, pork, beef, and fish: buy them all and freeze raw at -18°C with Freddy®. For example, uncooked shock frozen cutlets can be kept in the freezer for 6/8 months and if they are finely sliced will cook quickly in the frying pan with no need to thaw. Go to your regular butcher and choose the meat you like best, ask for it to be thinly sliced and vacuum packed then at home shock freeze at -18°C with Freddy®. More complex dishes, such as roast joints or stewed meat, if they are cooked then blast chilled, will keep for a week. If shock frozen in small individual portions they will keep for 6 months in the freezer! With Freddy® even singles will have a varied diet with excellent quality food. And a big extra advantage is quick preparation!

More and more people enjoy cooking for friends and family as a hobby. But the time at their disposal is often not enough to combine culinary delight with a job and the thousand and one commitments of modern living. Thanks to Freddy® time will no longer be a problem!

Fresh pasta and filled pasta

Fresh pasta
Once prepared, ravioli, gnocchi, pasta ribbons, crepes and cannelloni can be blast chilled with Freddy®. At a temperature of +3°C they will keep all their flavour and consistency for 3-4 days. Frozen at -18°C they can be kept for 3 or 4 months.

Filled pasta
Prepare the filling and blast chill it still hot to +3°C with Freddy®. Make the ravioli with the chilled filling and freeze the completed product at -18°C with Freddy®. Ravioli frozen in this way and kept in the freezer in containers or bags will stay fresh for approx. 6 months. When needed, plunge into boiling water for a few minutes, then they are ready for serving.

Fondant Au Chocolat

A gourmet dessert that’s a favourite with everyone! Prepare the fondant au chocolat and place in small aluminium containers. Uncooked and taken to -18°C by Freddy® it can be kept in the freezer for up to 6 months. To eat, place still frozen in a hot oven(200°C) for 10/12 minutes and serve with custard and a sprinkling of icing sugar.

Sushi

Sushi, the emblem of Japanese cuisine, is becoming more and more popular throughout the world. It is a combination of raw fish and flavoured rice that can be easily prepared at home. The essential ingredient for good sushi is raw fish, which must be bought absolutely fresh. In spite of the freshness of the fish and the guarantee offered by the fishmonger, great attention must be paid to the parasites found in all raw fish, such as ANISAKIS. The only way to eliminate them completely is by freezing to a core temperature of -20°C for 24 hours (European reg. 853/2004). With its shock freezing cycle Freddy® is the only perfect solution for eliminating bacteria without damaging the fish. After a shock freezing cycle to -20°C (takes approx. 20-25 minutes), keep the fish in the freezer at -20°C for a whole day. After at least 24 hours thaw the fish in the fridge at -3°C and it is ready to be eaten.

Entertaining guests in your home is always a pleasure, but often there’s not much time for cooking. Freddy® solves the problem by allowing you to prepare even elaborate dishes well in advance.
When guests arrive, what better way to start the evening than a delicious aperitif, a drink or a glass of good wine, accompanied by tasty titbits that at last you can have ready to serve.

Here are some ideas.

Canapés

Prepare canapés with toasted white bread spread with cheese or butter and topped with bresaola (dry salted beef), speck or smoked salmon. Shock freeze with Freddy®. They can be kept in the freezer in sealed containers for a few weeks. Before serving, leave to stand at ambient temperature for about 15/20 minutes and decorate with fresh herbs to taste.

Small pizzas and salted snacks

Use flaky pastry and prepare ready for the oven with tomatoes, mozzarella and basil. Freeze and place in the freezer in a bag. When required, put in the oven still frozen and after 10/15 minutes they will be ready to serve hot and fragrant.

Mini quiches

Prepare some quiches and chill to +3°C with Freddy®. In the fridge, wrapped in cellophane, they will keep for up to a week. To serve, regenerate for a few minutes in the oven. If frozen at -18°C with Freddy® then placed in the freezer in sealed containers, they will not only keep longer, but will also preserve all the qualities and flavour of a freshly made quiche. To serve, regenerate in the microwave or a hot oven for a few minutes.

Mousses

Prepare some mousses with cheese, salmon, vegetables, etc. Freeze with Freddy® in silicone moulds, available on the market in different shapes. Keep in the freezer. To serve, place on crackers or unsalted biscuits and leave to thaw at ambient temperature for 10/15 minutes.

I recently got into meal prepping, and a friend suggested using a blast chiller to help protect food for later in the week to prevent it from growing bacteria. I think the idea of using a blast chiller is super smart, as well as a way to help me stay healthy! Thanks for the information!
